After doing this a few times, this is really a breeze. Smoked salmon is my son's favorite, grilled steak with my wife and daughter and for me really the Beer Can Chicken or a good dark Belgian Beer.
The thermometer in the lid helps you keep the BBQ at the right temperature, I also use a separate thermometer for the core temperature that you simply click into place with a magnet on the holder next to the handle.
