The Apple Watch Series 7 doesn't have accident detection, only regular fall detection. Your Watch does send out an emergency message when you fall, but not when you're in a car accident.

For the stainless steel version, there are 3 extra colors: black, silver, and graphite. There's no Nike edition with a special sports strap.

The Apple Watch Series 7 has a slightly larger screen than on previous Apple Watch models. The bezels are a bit thinner. This way, you'll have more space to view your health data and to answer messages. The Apple Watch Series 7 aluminum is available in 5 colors. There are also 3 extra colors for the 4G version. In addition, there's a special edition with a Nike sports strap. This strap has extra ventilation holes for extra ventilation while you exercise.
